I also have low set thioyd bone so I look jawless and reccesed

uneven orbicularis oris probably, it's likely not a bone issue but a muscle imbalance.

It causes one side of my jaw to be weaker then the other

How do I fix this
it's probably caused by sleeping on one side and chewing unevenly.

either botox to decrease one side or fillers to increase the other, but also nobody notices minor asymmetry like this.

so would sleeping on my back help even it out? And I chew on the side with flat maxilla correct?

Probably the difference in camera angle

it's probably caused by years of these habits so it will take a while to even out.
