I don't know specifically about soy, but the Nazis wanted to promote vegetarianism, I guess it was explained to the rank members as a more civilized way. Hitler himself pretended to be a vegetarian. Basically they wanted their so called master race to become better slaves. They also promoted animal rights, which is an anti human concept.
