How should I lean max? Do I just get rid off all carbs and go on caloric deficit?
If you never worked out before then doing anything will build muscle. In that case start with simple calisthenics and build consistency before transitioning to weight lifting at the gym then do a beginner lifting program like 5x5 starting strength or any other program you want to try.

As a beginner diet doesn’t matter that much when building muscle to the point where you can even eat junk food as long as you’re in a caloric deficit. As you progress though this stop being the case then you have to start eating more protein while in caloric maintenance or caloric surplus.

That’s the gist of it.
