I have really good hair a day after washing, but when I use shampoo it looks shit

There are two reasons for dandruff, the first is an actual fungus on your scalp that causes dandruff, you need a medicated shampoo for that. The second reason is dryness, which is the most common.

If you have a fungus you need to buy medicated shampoo.

If not, then you're probably showering with hot water which is drying up your scalp, therefore making you have dandruff. To solve this, start doing shampoo every 2 days, and using conditioner every one of those days that you're not using shampoo, in a week or two your dandruff should disappear.

Edit: Forgot to include, STOP SHOWERING WITH HOT WATER, try using room temperature or cold water for your hair and scalp, it'll help out a lot.

I get an itch too when I don't use the shampoo, its specifically head and shoulders anti itch

Depends on what your dandruff looks like, yellow indicates something fungal, while whiter indicates dryness.

Also how much it sticks to your scalp, so dry dandruff will fall off easy whereas fungal will usually stick to the skin harder.

And also if there's any redness on your scalp (not from itching) it usually means that it's fungal.

Whether it's fungal or not, I recommend buying Nizoral shampoo, and using it as I mentioned before (every 2 days), this should get rid of your dandruff.

There are many variables: Is your hair dry? Oily? What shampoo do you use? What is the water temperature when you shower?
