They used natural products, washed hair with clays, vinegar, rice water, their hair wasn't damaged by chemicals and their mineral and nutritional intake was better

They most likely did get oily hair but just did not have the time to care. To prevent oily hair without shapmoo you need to shower and brush daily, I doubt medieval serfs did that.
