interesting now that i think about it. why is the saying specifically referencing potatoes...? would substitution for another vegetable or fruit be equally amusing, or would it lose its original charm? someone please try and let me know.

Perhaps because of the brand Apple iPhone, thus a poverty phone has been jokingly referenced as a potato.

another possible conclusion can be the potato battery science experiment where potatoes were used as an electrochemical battery to power a lowvoltage device like a small light bulb, so the term "potato phone" humorously suggests that the device runs on this extremely limited, low-tech power source and thus has practically zero computational power.
