How hard is it to be a bartender or a waiter?

For UKcels mainly, or just eu, both seem impossible to do high inhib and super high stress, especially when you are starting out

Like how the hell do waiters know the tables by heart, how the hell do bartenders know the drinks by heart, how the hell is someone starting out supposed to do this
