How much Vitamin D would you take in Winter (in IU/IE) in nordic countrys like germany with less sun? Doctors say 1.000 IE but many people say thats isnt enough.

It depends on your current blood work.

If you are already deficient in Vitamin D, then perhaps 2000-3000 IU is required in supplementation to increase your blood levels.

But if you already have adequate blood levels of Vitamin D, then I think that 1000IU in supplementation would be suffice - especially if you already have more than 50 nmol/L of active Vitamin D levels in your blood.

I've been taking 2400 IU daily for a couple of months now, probably gonna go up to 3000 IU soon.

After vitamin D is absorbed through the skin or acquired from food or supplements, it gets stored in the body's fat cells. Here it remains inactive until it's needed. Through hydroxylation, the liver and kidneys turn the stored vitamin D into calcitriol (the actual form the body needs).
Bottom line is if you've went out in the sunlight a couple of times during the summer your body doesn't need supplementation, you're just wasting money.

2000iu/day there's no evidence for anything above that to have significant effects

basically what @_Eriicc said
