how to get less volume? (hair)

How to get hair more like in the first picture? when I used to wash with shampoo, my hair would look like in the second picture (with the hearts) which looks gay as hell.

First image looks like they're wet, but I'm sure you can do something to have them permanently like that






I'm sure there are products, habits etc to give myself a good hair quality. I just haven't found it yet.
