remove short ribs
strain the liquid
get your mash going
bake potatoes until tender
seperate potatoes from the skin
mash with lots of butter and finish with cream until desired consistency
reduce liquid from braising until you have thick jus
turn heat off on the jus and whisk in cold butter
cut chives thinly as you can with the sharpest knife ( this is for garnish you could use thyme if you want tbh)
plate with mash on bottom, short ribs on top, and jus drizzled over short ribs then gsrnish with herbs
