how to reverse diet

been going very low calorie diet of 800 cals a day. once i reach target, how shall i go about reverse dieting to ensure i don’t gain fat back?
 
Maintainence calorie calc (calc stands for calculator)

why fasting better than v low cals for cutting fat?
i mean myself i eat like 1600, but lots of protein maybe 80g of carbohydrates, and i feel full, dont forget about diet coke
