I eat a big meal like this everyday + 300g peanuts+ other snacks and still 132lbs(60kg)

Just eat two of these and you’ll start gaining, if that doesn’t work increase portions even more, reduce veggies add fats

Avoid energy drink if possible, it makes you burn more cals
Or at least don't take the low cals ones like white
 
Simple answer, not enoug carbs and calories. With you metabolism you have to eat to the point of throwin up and I mean it. I can reccoment apetite rising drugs but I would not advice using it.

Eating junk food will age you, but since you can not gain weight, you have to choose. I did not mean like throwing up on each meal, you have to be so full at the end of the day that you should not even want water or even a food that you love

Eating 200 calories above your maintenance isn’t gonna age you bud, specially since your plate looks pretty healthy already
 
i don’t see much protein tbh ngl
 
so take 12 months. 365 days.
During this 365 days you will have to gain 10kg.
Which means, you need about 220 calorie surplus a day to gain the goal weight.
Now experiment yourself on average day, after activities and stuff like that.
Drink 3-4 litre of water daily, Eat in surplus, I reccomend eating meat, eggs, rice and potatoes (not really good but mashed up boiled potatoes can be good).
Only weigh yourself once a month, you have to gain around 0.8-1kg.
Wanna go double ? 20kg? double evrything except year.
