I just left capelins in their own flash freezing liquid in a glass bowl, and after 1.5 days, now at morning, I eat them, and they taste better, pretty good actually, and slightly softer.
I know it's healthier, to eat millions of bacteria, but I got an unexpected surprise of good taste.
Fresh unfrozen capelins had a bit of bitterness in them, and just lack of taste, and sometimes I used Georgian sauce or ketchup to chew it nicer.
Now I ate it by itself no problem.
Filetted bigger fish tastes pretty disgusting if you ferment it or let it ferment in fridge, but isolated tiny fishes filled with goodness (like eggs), taste better for sure.
From now on I will prepare food for next days, if it's small fish, early to let it ferment a little.
