For me, as soon as i lay down in bed to sleep at night my nose gets stuffed. When i sit or stand i can breathe properly, but when laying down i have trouble breathing thru my nose. I feel like it fucks with my sleep cos i am also never rested no matter how long i "sleep"

thats not true. I have/had sleep apnea for years, its familial and my skinny af brother has it too, used a cpap but didnt like the feeling. I used mouth tape and my problems were solved because it augments your mouth posture. Might not be 100% as effective as cpap but it works well. No harm in trying.Mostly cope if your inner anatomy is the reason for apnea.
