If it "didn't work like that" then the entire sexual selection for looks wouldn't be created in nature at all. But it does work like that, it's just that there are always certain outliers due to recombination that may have different traits - sometimes worse, but sometimes better. That's the entire advantage of sexual reproduction over other ways of multiplying.
