i think a stubble adds contrast if you have dark hair but shouldn't be anything more than stubble. i'll link a few good examples below.

i don't think a goatee is bad, but if you have a good chin, it covers it up too much. you had said, "Is a goatee or a little beard in general nerfing if bone structure is pretty good?" and i think stubble complements good bone structure, whereas a goatee could hide a good chin, but it also varies person to person.
