I think I have skin that is on the thinner side, but I don't know whether it's my actual skin that feels extremely soft or it's because of tiny tiny vellus hairs on my body

I'd prefer thick skin for me and the woman.
For me, too much vascularity on my arms and hands can look frightening. I've got a tiny little bit on my lower arms and hands, but it still looks soft enough to not be considered "freaky" or "stringy".

Yep, from that video I'd say your skin has medium-thin thickness based on the width of the pinched skin, but still young-looking because it goes down fast.
