This microbiologist on tiktok made an interesting video about this

She said steaks can be had rare but not ground meat, the reason is because when you have a cut of steak the inside is sterile but the outside has been exposed to different things, so when you sear it you kill it off. But when you ground up some meat, all those germs on the outside disperse through out the meat.

So ground meat has to be cooked through for it to be completely safe, although as long as it’s not completely raw you’ll probably be fine
