Is pork fat a good fat

I got 1kg of original pork fat (non clarified pig fat) the adipose tissue, its good if i use to fry some french fries? Last time i did they came out amazing

There isn't precisely any "bad" fat as long as they fit into your micronutrient. Pig fat is very similar to the evil seed oils in the sense that it is very high in Omega-6 fatty acids, so if you have an imbalance of Omega-3 to Omega-6s the pig fat may contribute to things like chronic inflammation, but it has a competitive content of saturated and monounsaturated fats.

Whether something's good in your diet or not depends entirely on the rest of your diet, does it fit in? Is it adding anything of value? Is it causing issues? In short, figure that out yourself.

Yes, I can, because I just did. The fundamental reason why seed oils are supposedly bad for you, is partially the cause why something like pig fat could be bad for you to a lesser extent. Omega-6 fatty acids oxidize very easily because they're quite unstable, they also fight for control with Omega-3 fatty acids in the cellular membrane, this all translates into oxidative stress and inflammation if the diet is not properly balanced with sources of Omega-3 fatty acids, which is pretty hard if you're consuming seed oils, simply there's too many omega-6s and people barely even eat fish or supplement omega-3.

Logically speaking, regardless of the source (be it animal, plant or seed) any fat high in omega-6 fatty acids will have the similar effects. Don't get me wrong though, pig fat IS definitely better as it's higher in monounsaturated and saturated fats, which are much more stable and in the right amounts are good for you, as opposed to seed oils that basically all omega-6, but comparing pig fat to other fats (like let's say ruminent fat or fats from fruits like olive or coconut), then pig fat definitely leans more toward the "bad" side along with seed oils.

But really, no fat is problematic, they only become problematic when they cause imbalances in relation to the rest of the diet. And those kinds of issues are easier to get from certain types of fats, like seed oils or pork fat.

It also has a lot of nutrients that seed oils doesn't have tho
