Depends on how much you take and your weight. Pretty sure a lethal dose is like 25g for the usual person. Funny enough sodium nitrate is in a bunch of processed meats and can form some nasty nitrosamines when cooked.

If you’re curious what would happen if you took a toxic dose… I imagine you’ll probably slowly suffocate whilst vomiting, as your organs simultaneously fail due to lack of oxygen since the haemoglobin will get converted into methemoglobin which is terrible at carrying oxygen.

In short, 25g for a typical person is incredibly likely to kill you if not for immediate medical attention, it’s essential to saving your life else it’s over lol
