Yea, you sign a bunch of contracts and in it, there's usually a clause where you sign over a lot of your rights to them. In practice, they will try to convince you that the changes will make the book sell-able. But they really do push hard to change your mind and ultimately, unless you take the self-publishing route, you don't want to bite the hand that might end up feeding you well.
