Cooked makes it taste worse
Also liver degrades very quickly due to the enzymes in it
Get it fresh so that it is still somewhat glycogen rich, preferably from a low stress grassfed animal
Also eat it raw
it should have a slightly sweet earthy taste
It should also be somewhat firm with a dark red appearance
don’t buy old liver
