The only kind of soft cheese I have ever enjoyed is feta cheese.

Melted cheese sucks, is difficult as fuck to clean off of dishes, and sticks to your palate and throat.

The only good cheese is hard, dry, room temperature cheese. This is the traditional cheese that our ancestors were talking about.

I must say I love myself some of that heavily processed molten cheese that taco bell uses. It just tastes like pure heaven to me for some reason, especially with the taste of the tortilla and seasoned ground beef in concert with it. Plus this avoids the very valid issue you raise about melted cheese being difficult to clean off of dishes, because you just eat the burrito in the wrapping paper and throw the paper away when you're done.

Good thread though. Not sure what you actually mean by "hard" cheese though due to limited experience on my part. Something very hard and brittle?
