youre confusing the mid point of a scale with the average of a data set
think of it like taking a test graded from 0 to 100 the exact middle of the grading scale is 50 but if everyone in the class studied hard, the average score of the class might be an 85 if you argued that "50 is the average because 0 and 100 are impossible to get" the teacher would look at you funny. The scale exists independently of the scores people actually achieve
