It wouldn't just have to be the sun's reflection, it could just be any reflection of light. All elements and their resulting compounds will exhibit some sort of absorption and emission spectra that would absorb certain wavelengths of light, but reflect/emit others. Whatever light is reflected is the color we end up seeing with our naked eyes. There's also the phenomenon of light scattering, where various particles end up dispersing the trajectory of light; wavelength has a big role in this phenomenon, and it would explain why the sky is blue. The situation with skin is probably more nuanced than these two phenomena (or maybe it is precisely that, I'm not too sure), but it is definitely related to how light behaves and how we perceive it, that's for sure.
