Do I need to play them chronologically? What one do I start with?

I'd suggest starting with ds1 and then ds3.(ds - dark souls) skip ds2. after that you can complete sekiro and both elden rings. theres not much plot going on so i wouldnt say that u need to play them chronologically but i bet u r not gonna enjoy an older game after a newer one.
