I use a nr 9 inox (carbon rusts in my pocket when I work and sweat all day) and it is so thin in general and thin behind the edge that it is very easy to sharpen to a scary shaving sharp level. It cuts food like a laser, no other pocket knife I tried comes close. It may require some modifications to open more easily tho and it swells very fast from moisture and is much harder to open then. Another drawback is its fragility, due to its thinness that gives it god like cutting ability. Still I would use nothing else for eating out in the field or forest. @Jason Voorhees
