Question for hindus

I have a very big question. India is largely vegetarian. But Indians do not produce and eat tofu, which is an excellent source of plant based protein that contains 8 necessary amino acids. If you eat tofu, vegetarianism won’t fuck you up that much. Why don’t Indians eat tofu?!?
