Ngl I think that Yujiro is some kind of mutant even by Hanma standards.

First off he has red hair which is something that neither of his parents have.

Also he has red eyes which is a feature that not a single human without albinism has on this planet.

The writer of Grappler Baki is actually pretty smart and knows a lot about fightning, science and stuff like that so he probably intentionally gave Yujiro red hair and red eyes to imply that he's some kind of mutant.

Light colors reflect light more, thats common knowledge.
So eyes with less melanin would reflect more light into the retina, which means that the person would have better vision in dark environment (however would also be more sensetive to sunlight)
Also the only neolithic groups in Europe who had light eyes were WHG - western Hunter gatherers, who were also of cro-magnon robust chad phenotype.
