Punjabis? It's because they're mostly agrarian and eat a lot of dairy.

As for the rest of India I think only 20-30% of the population is vegetarian and mostly in the Northwest and West. Idk why some are vegetarian hinduism doesnt condemn meat eating

Its probably due to buddhist influence in India before the 7th century. Many empires back then gave patronage to Buddhism (Mauryan empire, Greco Bactrians, Indo Parthians, Kushans etc)

Almost all Hindus in the east and South are meat eaters and in some states of India 150 goats are sacrified to Shiva, Durga is given offerings of fish etc
