ingredients:
paprikas
zuchini
spring onion
tomato
basil
parsley
feta
quail eggs
paprika powder
garlic
kurkuma
salt/pepper
step by step
- chuck chopped paprika in a frying pan
- add zuchini sliced in thin strips
- add spices
- when the paprika and zuchini start becoming soft add the spring onions
- add tomato blocks, used canned if you want to save time
- let it simmer for at least half an hour so some of the moisture from the tomato evaporates, otherwise it's too soupy.
- once it's thick enough add eggs, you can use chicken if you want, I used quail eggs because I prefer the yellow over the white and they have more of it.
- add feta and chuck parsley on top.
- let it simmer until the eggs start to boil
- serve with couscous, or a baguette in my case.
