Raw milk dosen’t actually spoil so fast if you handle it correctly.
Pausterized milk sours when expired while raw milk actually rots, so you’ll know when it truly goes bad.
But raw milk can last for a week or even 2 if you store it correctly before it starts to degrade

Yeah, you can actually freeze raw milk and it dosent lose its enzymes or anything. But it takes like a whole day to thaw, so leave it unfreezed one day before you plan to consume it.

there's instant flavored pudding mix that you can buy in every store, you throw that in milk, stir it and walk away.

you can also just mix whey, milk, corn-starch and some flavoring like stevia or erythrithol.

or just use flavored whey then you won't have to.

Just let it ferment into yogurt if you can't consume it all. You can read "The Art of Natural Cheese Making" by David Asher.

I envy people who can eat a lot of dairy tbh, even raw and fermented it gives me insane constipation if I eat more than 500 grams. I wouldn't be surprised if rape feels better than some of the milk shits I had.
