Shouldn't eating chicken cartilage, tendon and animal organs be good for height?

I always thought that I had a crappy diet. Until recently I realized that ever since I was small, when I eat chicken I always make sure to eat the cartilage, tendon, organs basically everything that my teeth can handle. Sometimes even the bones itself it they're soft enough.

I noticed that no one else does it. And I found out that they actually contain a lot of collagen, calcium, and many others.
