Your body needs glucose for energy. And table sugar converts reasonably quickly into glucose. Though there are carbs that convert even faster to glucose than sugar does despite the fact that sugar gets demonized the most for causing diabetes.
Your body needs fat for proper functioning. But you don't need more than 0.3g fat per lb of bodyweight.
Bodybuilders ideally are supposed to eat a high carb, high protein, low-ish fat diet (but not too low). Because both glucose and protein are very anabolic. You need glucose to replenish glycogen stores after working out. You also need glucose to power your workouts. And carbs (especially fast carbs) convert faster to glucose than fat does.
I think a higher fat diet on rest days is fine. So as long as you don't backload your calories. I think its best to eat throughout the day or frontload your calories if you lift. But on days where you train, ideally you want to budget your calories towards carbohydrates and protein before and after your train. Pre-workout, carbs matter more than protein but protein still matters according to some studies. Post-workout, both protein and carbs are very important.

I eat whatever I want and I’m sitting around 10 percent bf @ 71kg and 173cm

Indeed. My breakfast 1-2 hours before gym is carbs and bit of protein. After gym I eat carbs and protein.
