I would say an adequate sex robot is about 200-300 years away and a true 100% passing sex doll made of true biological tissue is about 600 years away at least.
The first needed for building such a device is an ai capable of mimicking human behavior. It needs to be able to have conversations and perform simple tasks like cooking food, cleaning and performing maintenance on itself. I think it is likely we might even have ai this powerful in 100 years. A really powerful ai can be even a better conversation partner than a human as it can access massive amounts of data throught the internet and use machine learning to adapt itself to the users subconcious preferences.
The hardware is the next major technological hurtle.
While we can create robots that sort of appear human we are still centuries away from anything that can move like a human. To do this we will need artificial muscles which will likely involve advanced nanotechnology. The skin can be created with more advanced watertight materials like silicone. Another technology that will be needed is an effective power source. I would suggest a fuel cell powered by safe non toxic chemicals such as glucose or alcohol which it would replenish by drinking. This will make it seem more alive as it would produce constant waste heat, breathe out co2, need to eat, and also have an energy storage capacity similar to a human.
Internally it would also need to produce lubrication, be able to run a "cleaning cycle" and I would even add glands on its body to make it secrete chemicals that make it smell human to avoid the uncanny valley as much as possible. The goal is creating a machine that mimics a biological life form as much as possible. However this same tech can be used for better things like human augmentation, creating probes for interplanetary colonization and mass production. Some polities might even make these sorts hedonistic things highly illegal as they could be very harmful for society.
