Other than the obvious fact that it's something we humans tend to do when we're aroused, on a purely measurement based point of analysis I believe it's because it improves the philtrum to chin ratio, due to the fact that most people nowadays have it under an unideal range due to either lack of chin height (due to an undeveloped mandible, which is a common trait nowadays) or a philtrum that is too long (genetics), rather than having it off due to too long of a chin (happens rarely and is usually due to medical conditions) or too short of a philtrum (never seen that), and so when the lower lip is bitten the chin height increases thus making the ratio closer or fully ideal for the length of time the lower lip is bitten. Same reason why some people look prettier when they smile.
