There's a couple kids who I see that are just like full on Indian looking, but sometimes I see an Arab and he just looks white like with a tan. Why is there such a difference?

You have to distinguish between arabs as an ethnic group and arabic speakers. A lot of people would call themselves arabs but they are actually amazigh, egyptians, syrians, pheonicians, sudanese etc.

Levantine Arabs usually look white
While other Arabs like North Africans and Gulf look a bit Indian

they are mostly not arabs but arameans, pheonicians, syrians and hebrews who converted to islam by force and have been arabised

Levantine: olive skin, curly hair, taller, passes as Med.

Gulf Arab: brown skin, straight hair, short, passes as Pakistani
