It has been a long time since I was in an Apple store, but I thought all their actual phones on display were secured. Doesn't make sense they would leave that many working phones unsecured so that they could be stolen so easily. In any event he can only sell them for parts, and most likely he was caught before the end of the day because some of the phones likely had tracking software enabled.
