Well we found your weak point. Your Omega 3:6 ratio is definately not good, I'd even go as far as saying it's horrible. If you want a good peanut butter replacement you can also look into macadamia nut butter, much lower PUFAs, much higher MUFAs. Alternatively, dark chocolate, as long as it's not a brand way too high in heavy metals.
If you want any other suggestion, I would add some berries, pomegranate or a vitamin C fruit like oranges or kiwi for antioxidants. It depends a lot on where you live but dates can get expensive, they are very poor nutritionally, if you only consume them for the carbohydrates you can just add another banana, and replace the dates for either of the fruits I mentioned.

I don't think carbs are bad at all, of course, if you're active as you said. I'm a BJJ athlete, I've done keto and low-carb before, it's shit for my needs, I do a lot of rolling and lift 4 times a week. My body lives off rice, potatoes, honey and rice cakes. Sadly low-carb diets are extremely bad for performance.still, its mostly carbs(sugar) if you're active sure its good
