North Indian Brahmins, especially the Kashmiris tend to look way different from the Central and South Indian Pajeety ones because the former tend to consume better diet containing dairy n meat + better colder climatic adaptations

A lot of them infact do, kashmiris in general have better bone structure allhtough they are not very lightskinned on average.
True they are not usually super pale, but do have better bones structures than any other north Indian along with lighter features. Jatts and gujjar are the same but they tend to be shitskins and have average/bad eye area.
Na they don't a significant chunk do, but most have darkbrown hair and light brown eyes with wheatish skintone. They just have good bones that's it.The average Pandit looks like me bro

Most of the northern ones eat meat, the younger gens don't eat as much compared to like 70-80 years ago.

Nope, i have been to both Rajasthan and punjab. They both have high percentage of meat eaters especially Rajasthan, although they have gone down int he past 70-80 years. A decent amount of people still consume meat there.
