bread is high call. rice crackers, is low cal option substitution for bread.
 
You can eat as many greens as you want and almost as much lean meat as you want without calorie counting, and you will likely stay on a cut because of how few calories you are eating daily. (Half a kilo of green is practically calorie free, 100g of protein from tuna, lean steak or eggs has ~400kcal, 400 grams has only 1600kcal)

The problems begin when you start adding lots of junk carbs to a diet. A small handful of potato chips has almost no nutritional value, proteins or vitamins but it can cost you 300kcal. A tiny 50g chocolate bar has almost zero nutritional value but it can cost you 250kcal.

That being said, I don't advocate keto all of the time if you are building muscle. Workouts are very hard without carbs.
It's fine to fuel workouts even with junk carbs. Your energy levels on keto will drop when it comes to heavy lifting at the gym.

Living keto on days where you don't lift heavy weight is just fine though.
As long as you don't make it a religion... Even when I was cutting by only eating greens and meat, I'd still have the occassional pizza or chocolate every week or two. Life is short.
