What makes caricatures easily recognizable?

For example if you modify in Photoshop a person's face, even slightly, just a few mm here and there, it can look completely unrecognizable, it's like a completely different person, but caricatures modify the features a lot, sometimes in a grotesque manner, but still, you can immediately recognize who that person is, what exactly is going on here?

They amplify the unique features of a face, hence the caricatures are recognisable. It's an interesting art tbh.
