What should I change? My only sources of carbs are rice, oats and fruit, while my sources of fats are eggs, meat etc.

Now obviously i'm not your dad. But oats are utter garbage. If you want carbs that bad, just eat a small amount of white rice along with your protein (meat + broth cottage cheese whatever) at night.
