Too many cultures with their own religions to have one singular answer. Before the Turkic invasion of the Seljuks, Anatolia was part of the Byzantine Empire which was Christian. Before that, you have Hellenistic kingdoms such as Bithynia and Pontus and Pergamon and the Seleucid Empire, Celtic Gauls such as the Galatians who would have practiced a Celtic Gaelic religion. Persian religion and Zoroastrianism would also spread there due to Anatolia being part of the Achaemenid Persian Empire before that.

Before that you have native religions from people’s like the Lydians, Phrygians, Hittites, Luwians, and Schythian religion from the Cimmerian people’s

The turks that invaded Anatolia were of the Oghuz Turks, a turkic branch from western central Asia which became sort of Persianised. Mongols aren’t Turkic, and Turks are mainly descended from western Turkic people by the Caspian sea, who look more western

But why were the Orkhon inscriptions in Mongolia? Ah wait those were from a different branch of the Turkics.

Yes, the Gökturk Khaganate, the first Turkic Khaganate who also ruled over Mongolia
