put about a tbsp of butter in the pan, mix with cooking oil of your choice to prevent burning at high temp. then sear both sides on high until you have some nice browning. after that, you bring to low temp, put in way more butter and some rosemary and baste it for like 5-7 minutes.

before cooking rub a generous amount of whatever seasonings you like on the steak and let it come to room temp. also, you can make a nice aoli with the rosemary oil butter mixture left over
