Jews are a race you legit can’t convert to Judaism.

Exactly, you can't just become a jew. That's why there are atheist jews and religious jews whereas you don't get atheist christians, muslims, buddhists e.t.c. The reason they succeed is because they stick together and work behind the scenes while getting others to do the dirty work for them.

Ashkenazi jews especially those in the US are the smartest ethnic group in existence.

This generally leads them to the top of socioeconomic ladders in almost all countries they are in. Naturally some will try to impose laws to their benefit leveraging their socioeconomic status since they have strong community bonds.

This happens in many places but to a smaller scale like the brahmin in India, igbo in Nigeria, Boers in SA etc.
