Go to halal butcher or something.

Buy any kind of liver except lamb liver because that shit smells horrible. I almost puked because of how disgusting lamb liver smells.

find a farm. I get bison liver from some farm in Virginia. if you're in the US it shouldn't be hard to find one. a butcher as well
