because blue eyes have contrast with the rest of the human body. brown eyes are similar to skin and hair color while blue eyes are completely different. this is why brown eyes are seen as trustworthy and blue eyes are seen as exotic. brown is a neutral color while blue isn't so blue stands out more, and humans mostly think that things which are 'special' are more attractive, but the attractiveness of blue eyes is also caused by cultural reasons like blue eyes being associated with wealthy white people while dirty poopskin indians and muslim immigrants have brown eyes.

As for the green eyes being not as sought after as blue eyes, that’s not true, green eyes are more rare and they are actually sought after just as much or more than blue, but they are more prevalent in middle eastern/ central Eurasia demographic and not as widely recognized in the west, so we are just not as exposed.
