Why are some races classified as white when they don't have white skin?

Sicilians aren't white, they're brown. Convesely, why aren't jews white?

The concept of white has changed a lot throughout the years

Back in the 1700s not even Germanic ppl were considered white

Only Anglos other whites were considered of swerthy complexion

As time went on more and more ppl came to be considered white

But that’s more of an American thing tbh

Here in Europe nobody really uses that terminology they only consider the person whatever their country is
