M8 you cant give people the honest answer just say its da Jews and leave thredraw cheese is often fermented and aged. the ph level and moisture content of the milk decreases during the aging process. salt is also often added, which creates an environment that is not suitable for the growth of harmful bacteria. raw cheese also goes through strict standards and checks (ideally) before being sold on the market
the lactic acid bacteria that is healthy and essential to cheesemaking, will outcompete and consume the pathogenic bacteria that may have been present in the milk

Probably cus raw cheese isn’t consumed as heavily as milk so the chances of someone getting sick (company gets in legal trouble) are much lower with raw cheeseIt seems kinda dumb cus raw cheese is raw milk
